To be honest I still question why it has taken me so long to get to a Patty and Bun burger for review. When the Pork Belly burger was released it was certainly an opportunity to try Patty and Bun with one of my favourite meats, Pork Belly. Being lockdown the DIY was naturally the way to go, this is how it went.
The Bun: 19/20
Quick submission: I completely messed up toasting these buns! I did not realise that I had not done them going through the steps for this DIY and so I was quick rushed with no pan space left to toast the buns! Patty and Bun have a big bottom policy so I cut the buns about two thirds of the way up from the heel and threw them in a high temp oven with my cooking fries. I have no idea how it happened but these buns came out a different level. They were soft and light but also had an amazing crisp that would be synonymous with something like a ciabatta bread. Soft, light, crispy and completely took in the flavour of the meat. Brilliant.
The Toppings: 7/10
Coriander, Pickled Red Chillis and Pork Belly. Sounded like a pretty awesome combination on paper. It was nice, don’t get me wrong but the flavour from the chilli and the coriander was completely redundant against the pork belly. The pork belly itself did not have much flavour, it was pretty much what I expected but it was not full of flavour as I may have hoped. The toppings definitely did increase the overall balance of the burger, however, so it has scored above average, just not outstanding.
The Condiments: 9/10
This White BBQ Sauce was something special. It had a nice spice but tasted smokey. How to explain it? The sauce alone, I could have drank. Mixed in this burger generously, heightened the flavour of everything else and was just brilliant. For me, needed a bit more spice to bring out the flavour of the cheese some more but it was pretty amazing.
The Cheese: 13/20
The Smoked Cheddar Cheese in this burger was decent, a little more mature would have been overkill with the other flavour profiles taken into consideration. The description is, smoked cheddar cheese, but I genuinely struggled to find much flavour in it. Imagine like a decent cheddar that you would put on your toast but needed a little sauce, without the rest the cheese didn’t have much going on but it was there!
The Patty: 17/20
Patty and Bun patties are cooked at an extremely high temperature and for 1.5 minutes per side. Every time I get a DIY Kit with a quick fry and high temp I have to deal with the cleaning afterwards and the fire alarms going off for a solid 5 minutes – but for Patty and Bun it was worth it. The patties come pre-formed, which I prefer to having to weigh out the patties and form. Aged beef always yields a strong gamey flavour but that is something I have come to love. With these patties there was no difference, strong flavour and beef flavour was enhanced by the pork belly. Although I did really love the flavour of the beef I still think that there are others on our leaderboard that just have that much more quality in the meat which is why it has not scored top notch here.
The Taste: 16/20
Overall this burger had a great taste. The pork belly definitely enhanced the flavour of the beef and each bite was great. I have to be honest, I was expecting a little more from such a well renowned brand with multiple sites but the taste did not disappoint by any stretch of the imagination. Decent cheese, pork belly to patty was decent and the white BBQ sauce just capped off a delightful tasting burger. Our Verdict: 82/100
Patty and Bun bring out tons of burgers and I am looking forward to getting through them in coming months. Reviewing a DIY without knowing the brand too much is a little tough because we do not have any previous experiences of them to go on first hand. I am looking forward to going to Patty and Bun once the lockdown is over and tasting their creations from their own chefs. The Pork Belly Burger is not a disappointment, pretty great burger and I would definitely order it again. I love the idea and I loved the bun, whether that was a mistake or not but overall, solid offering with good flavour. Patty and Bun have a funky website too, you can check that out here
